
He told me to cook so I cooked. You guys know me by now. IF I cook it’s gotta be pretty simple and healthy. Salads are my jam for this reason, but not just any salad. I jazz them up something good! Sharing my easy summer spicy cobb salad recipe with you all today. This is the PERFECT summer lunch, dinner or make it BIG and serve at your next BBQ! It tastes as good as it looks!
So yes. Even Summer could probably whip up a cobb salad. It’s not hard. BUT to really make this easy summer spicy cobb salad stand out you’ll need to elevate those basic salad ingredients starting with the chicken. It’s summer so you know what that means. GRILLING SEASON! Before tossing the chicken on the grill you gotta add some spice! I keep 2 different Bowl & Basket seasonings on hand for when I want to add some spice to our meats and seafood. I used the Nashville Hot Chicken Seasoning. If you love spicy then you’ll love this one. It’s HOT! I also love the Chili Lime Seasoning as it has a great kick but just not as intense as the Nashville one.
WHAT YOU’LL NEED TO MAKE THIS EASY SALAD
Ok so let’s get into what else you’ll need to make my easy summer spicy cobb salad recipe. I grabbed an assortment of Bowl & Basket greens, hardboiled eggs, avocado, tomatoes, fresh blue cheese (which really cuts the spicy seasoning nicely), Wholesome Pantry Croutons, bacon bits and I grilled some corn. You absolutely have to grill your Jersey corn in the summer. I will actually grill extra and keep in my fridge to add to salads all week!
Once I season my chicken I just put on the grill and I always make sure to get those grill marks that Erik loves! Great thing too about the tenderloins — they cook pretty quickly!

Once your chicken is done just add all your ingredients and VOILA! There’s your easy summer spicy cobb salad. I mean is that a pretty salad or what?! Personally I didn’t create a salad dressing recipe as pretty much any dressing will go with a cobb salad. I usually change mine each day. Some of my favorites are honey mustard, a light blue cheese or a basic balsamic vinaigrette. Oh gosh even a raspberry vinaigretteĀ can be good. I told ya — pretty much any dressing will work!
